The holidays are coming up! And you really want to showcase your produce, right? Well, this is a super fast, tasty, make ahead way to do just that! This is cranberry sauce, but definitely not that boring stuff from a can. This has chunks of garden fresh apples, spicy cinnamon and zingy ginger. How chunky the apples remain in the final product will depend on they types of apples you use. I like to mix them up so that I get some firmer pieces and some that melt right into the sauce. And did I mention, you can make this way ahead? It will easily store in the refrigerator for a week. But it is also crazy quick to make; like 20 minutes max. So it is super doable while your turkey is in the oven.
Ingredients
1 1/2 cups chopped apple (peel or not, it's up to you)
1/2 cup grape or apple juice
1 package fresh cranberries (12 oz.)
3/4 cup packed brown sugar
1 tsp ground ginger
1 tsp cinnamon
1/2 tsp fresh minced ginger
Directions
Combine all ingredients in a medium saucepan. Bring to a boil, reduce heat and simmer until thick (about 15 minutes), stirring occasionally. Smoosh the cranberries with the back of a spoon against the side of the pot while they are simmering. Sauce will be thick and aromatic when done. It will also thicken up even more, to almost a jam consistency, as it cools.
Allow to cool before serving.
