This is how I originally got my kids to try kale. It converted them (and my husband too)! Now they will try any kale recipe I throw at them. Okay, I will concede that they may not love every kale recipe, but they will at least try it! These are an easy, nutritious, fast and crunchy snack. Perfect for mindlessly shoveling into your mouth while watching movies during those cold autumn evenings. Just like potato chips, only healthy.
Ingredients
3 Tbsp. olive oil
2 bunches kale
2 tsp salt
1 tsp fresh ground pepper
additional seasoning, optional (see below)
Directions
Preheat oven to 300 F.
Clean kale and remove tough central rib. Spread out onto large baking sheet. Drizzle with olive oil and seasonings. Massage kale with your hands until all pieces are evenly coated.
Place in oven and bake for 20 to 30 minutes, tossing halfway through cook time, until leaves are completely dry and crispy.
This doesn't store well in the fridge; it tends to get soft and a bit bitter. So either eat all of it in one sitting, or just leave it on the counter and grab a nibble when you walk by until it is all gone!
