If you have only ever tried turnips mashed with butter, you need to give this recipe a try. These turnips are coated with a shiny, sweet and salty coating that turns them into almost candy. It is full of umami flavours, without completely taking over the sweetness of perfectly cooked turnip. Really, can you think of a better way to eat turnips?
Ingredients
1 lb peeled turnips, cut into 1" cubes
3 Tbsp butter, divided
1 Tbsp white miso
1 Tbsp honey
salt to taste
toasted sesame seeds, optional
chopped cilantro, optional
Directions
Place turnips in a medium sized saucepan. Add enough water to barely cover and 1 Tbsp of the butter. Bring to a boil, reduce heat and simmer 10-12 minutes or until you can just pierce with a fork. Shake occasionally to prevent sticking. You don't want them too soft at this point as we are going to cook them a bit more.
Drain turnips and return to pan. Add remaining ingredients and stir to combine. Sauté 5-10 more minutes on medium high heat, until turnips are completely tender. Season to taste with salt. Garnish with chopped cilantro and toasted sesame seeds to serve.
Serves 4-6
